8 ounces Ghiradelli 60% cocoa bittersweet chocolate, chopped fine
2 tablespoons Hersheys cocoa powder
1 teaspoon instant espresso powder
5 tablespoons water
1 tablespoon brandy
2 large eggs, separated
1 tablespoon sugar
1/8 teaspoon table salt
1 cup plus 2 tablespoons heavy cream, chilled
